Science Saturday!

I had planned on moving to the next step in the whole atom/molecule/chemistry saga I’m building, but I decided to put that off for a week. Instead, I want to address a few of the topics presented in Food, Inc. I just finished watching it for the first time, even though it’s nearly one year old now. As with most documentaries I watch, I had an internet browser open next to me the whole time so I could fact check anything that sounded off. It took a surprising amount of effort to find many of the facts I was looking for, so I thought it would be a good idea to post two of my most interesting findings and sources. Even if you haven’t seen the movie, this post should address some food-based issues you’ve heard about.

Science Saturday!

Following the atom entry, I thought today we’d look at molecules, which are just combinations of atoms. Specifically, I’m going to talk about an aspect of molecules called polarity. This is a pretty interesting topic for chefs because it can explain many of the things you encounter every day and don’t even notice, like oil turning into little balls and floating on top of water. The way your microwave heats up food is also dependent on polarity, so even if you just make T.V. dinners, you’ll learn about something you use every day. Finally, soap relies on polarity, so even if you never make anything in your kitchen I can still show you how useful this trait can be. That is, assuming you bathe or wash your hands. (more…)

Today, let’s take a look at atoms. I picked this particular topic because many people can’t exactly describe an atom, and there are common misconceptions I’d like to dispel. Some of the distinctions I make may sound obvious, but I tried to add something for every knowledge level. 🙂  (more…)
